Sunshine Oatmeal
Serves the New Mother for 3-5 Days
Refuel a new mother after the long days of labor, delivery, and sleepless nights. Sunshine Oatmeal helps digestion and gives the new mom sustained energy. Spices like cinnamon, cardamom, and nutmeg make it so comforting, but the addition of orange zest gives it a burst of brightness!
Ingredients
1 tablespoon Ghee
2 cups oats (I like One Degree Organic Foods Gluten-Free Sprouted Rolled Oats)
2 can coconut milk
1 teaspoon cinnamon
1/2 teaspoon cardamom
1/4 teaspoon nutmeg
1 bay leaf
1/2 cup raisins
Zest of 1 orange (if you don’t have a zester, you can cut a few slivers of the orange peel and throw that in, just remember to take it out before serving)
1 teaspoon almond extract
1 teaspoon vanilla extract
3 tablespoons maple syrup (adjust to your sweetness level, I like mine a bit sweeter!)
Pecan or walnut pieces for topping
Toasted coconut chips or flakes for topping
Drizzle of milk (pasture-raised cow’s milk or almond milk is preferred)
Directions
Heat a wide bottom sauce pan or Dutch oven over medium heat and add the Ghee.
Once the ghee is warm, add the cinnamon, cardamom, and nutmeg and stir. Heat for 1-2 minutes.
Add the oats and cook in the ghee + spices until lightly toasted, 3-4 minutes.
Add coconut milk, orange zest, bay leaf, raisins and salt. Stir. Bring to a boil, then cover and simmer on low heat for 8-10 minutes until the oats absorb all of the moisture.
When finished absorbing, add the vanilla and almond extracts + the maple syrup.
Serve in a bowl topped with nuts, coconut flakes, and a drizzle of milk.
