egg bites

These make great one-handed breakfasts or snacks for the new mom who’s constantly holding a baby.

Ingredients

  • 6 pasture-raised eggs

  • 1 ¼ cup cottage cheese

  • 1 ¼ cup shredded cheese of choice

  • 2 tablespoons cornstarch

  • heaping teaspoon of salt

  • ¼ teaspoon black pepper

  • Optional add-ins: crumbled bacon or breakfast sausage, finely shopped spinach, mushrooms (make sure to add these in after blending and once the egg mixture is in the muffin cups)

Directions

  1. Bring kettle of water to a boil, set one oven rack in the middle position, and one in the lowest position. Preheat oven to 300F.

  2. Place 9 × 13 baking dish on lower rack and fill halfway with boiling water.

  3. Spray muffin pan with avocado or coconut oil non-stick cooking spray.

  4. In blender, combine eggs, cottage cheese, shredded cheese, corn starch, salt, and pepper.

  5. Pour blended mixture into muffin pan. Put any additional ingredients (like bacon, sausage, or veggies) in now.

  6. Bake for 20-25 minutes.

Note: these have a slightly soft, steamed consistency.
